Mediterranean salad
Ingredients :
- Cherry tomatoes.
- Cucumbers.
- Olives.
- Feta cheese.
- Red onion.
- Fresh basil.
Dressing :
- 3 tablespoons olive oil.
- 1 tablespoon balsamic vinegar.
- 1 clove of minced garlic.
- Salt and pepper to taste.
Preparation :
1. Cut the cherry tomatoes in half, the cucumbers into slices and the red onion into thin strips.
2. In a large bowl, mix together the tomatoes, cucumbers, olives, crumbled feta cheese, and red onion.
3. In a small bowl, mix all the dressing ingredients.
4. Pour the dressing over the salad and mix gently.
5. Garnish with fresh basil leaves before serving.

Aglio e Olio Pasta
Ingredients:
- Spaghetti
- 4 cloves of garlic, minced
- 1 red chilli (optional)
- Fresh parsley
- Extra virgin olive oil
Preparation :
- Cook pasta according to package instructions.
- In a large frying pan, heat olive oil and add garlic and chilli (if using) until golden.
- Mix the pasta cooked in the pan with the olive oil, garlic and chilli.
- Sprinkle with fresh chopped parsley before serving.

Mediterranean fish
Ingredients :
- White fish fillets (hake, sea bass, or similar)
- Ripe tomatoes, cut into cubes
- Black olives, pitted and cut in half
- Capers, drained
- 3 cloves garlic, minced
- Fresh parsley, chopped
- Salt and pepper to taste
- Extra virgin olive oil
Preparation :
- Season the fish fillets with salt and pepper to taste.
- Heat olive oil in a large skillet over medium heat.
- Add the fish fillets and cook until golden brown on both sides. Remove and reserve.
- In the same pan, add a little more oil if necessary and sauté the garlic until fragrant.
- Add the tomatoes, olives and capers to the pan. Cook for a few minutes until the tomatoes soften.
- Return the fish fillets to the pan and cook over medium heat until completely cooked.
- Before serving, sprinkle with fresh chopped parsley and drizzle with a generous drizzle of extra virgin olive oil.
