Mediterranean salad

Ingredients :
- Cherry tomatoes.
- Cucumbers.
- Olives.
- Feta cheese.
- Red onion.
- Fresh basil.

Dressing :
- 3 tablespoons olive oil.
- 1 tablespoon balsamic vinegar.
- 1 clove of minced garlic.
- Salt and pepper to taste.

Preparation :
1. Cut the cherry tomatoes in half, the cucumbers into slices and the red onion into thin strips.
2. In a large bowl, mix together the tomatoes, cucumbers, olives, crumbled feta cheese, and red onion.
3. In a small bowl, mix all the dressing ingredients.
4. Pour the dressing over the salad and mix gently.
5. Garnish with fresh basil leaves before serving.

Aglio e Olio Pasta

Ingredients:

  • Spaghetti
  • 4 cloves of garlic, minced
  • 1 red chilli (optional)
  • Fresh parsley
  • Extra virgin olive oil

Preparation :

  1. Cook pasta according to package instructions.
  2. In a large frying pan, heat olive oil and add garlic and chilli (if using) until golden.
  3. Mix the pasta cooked in the pan with the olive oil, garlic and chilli.
  4. Sprinkle with fresh chopped parsley before serving.

Mediterranean fish

Ingredients :

  • White fish fillets (hake, sea bass, or similar)
  • Ripe tomatoes, cut into cubes
  • Black olives, pitted and cut in half
  • Capers, drained
  • 3 cloves garlic, minced
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • Extra virgin olive oil

Preparation :

  1. Season the fish fillets with salt and pepper to taste.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the fish fillets and cook until golden brown on both sides. Remove and reserve.
  4. In the same pan, add a little more oil if necessary and sauté the garlic until fragrant.
  5. Add the tomatoes, olives and capers to the pan. Cook for a few minutes until the tomatoes soften.
  6. Return the fish fillets to the pan and cook over medium heat until completely cooked.
  7. Before serving, sprinkle with fresh chopped parsley and drizzle with a generous drizzle of extra virgin olive oil.
