How we obtain our oil. Quality throughout the production and packaging process

Every year we select between our multivarietal Olive Grove plantations and those of our clients, those whose olives have enjoyed the best agroclimatic conditions and have the highest organoleptic quality to produce EVOOs of the highest quality. It should be noted that all of them have been planted and cared for throughout their development and production cycle by expert agronomists and specialized field personnel from our company.

The arrangement of the olive trees in a hedge allows fast harvesters to massage the tree and collect all its fruit in just a few hours. Furthermore, the harvest is carried out in a completely aseptic manner, since all the olives are collected from the tree without them touching the ground, thus preserving their health and organoleptic quality.

Choosing the ideal harvest time is a very important task, to which we pay special attention and which significantly affects the quality of the oil finally obtained. We do it early, when the olives are at the optimal point of ripeness to produce EVOOs of the highest quality.

Once the olives are collected, we immediately transport them to the mill for grinding. We carry out the olive juice extraction process on the same day it is harvested and “cold” so as not to alter its organoleptic properties and preserve all its vitamins and antioxidants in the oil.

We store the extra virgin oil obtained in the winery, in stainless steel tanks with an inert atmosphere and a constant temperature for its perfect conservation.

We make it on demand and mostly in metal cans, a sealed packaging where the oil is protected from light. This type of packaging is environmentally sustainable, since, once used, it can be recycled infinitely without losing any of its properties. For those who wish, we also have our oil available in 5-liter bottles.

Extra virgin olive oil an inexhaustible source of health.

Extra virgin oil (EVOO) is an inexhaustible source of health, thanks to its high content of monounsaturated (oleic acid) and polyunsaturated (linoleic acid) fatty acids, as well as the presence of vitamins A, D, E, K and compounds phenolics, such as hydroxytyrosol and oleuropein, which have very beneficial effects on our body.

The unsaturated acids (monounsaturated and polyunsaturated) present in extra virgin olive oil, such as; Oleic, linoleic, linolenic and palmitoleic acid significantly reduce LDL cholesterol levels (bad cholesterol) by replacing saturated fatty acids in the diet.

Extra virgin olive oil reduces the appearance of thrombosis , since it has a preventive effect on the formation of blood clots and platelet aggregation.

The regular consumption of extra virgin olive oil with a high content of polyphenols benefits the control of hypertension because it helps reduce both systolic (maximum) and diastolic (minimum) blood pressure , as well as contributes to the protection of the lipids in the blood, one of the risk factors for cardiovascular disease.

The natural antioxidant substances present in extra virgin olive oil, such as; Vitamin E (alpha-tocopherol), carotenoids and phenolic compounds (such as hydroxytyrosol and oleuropein), help protect our cells from damage caused by free radicals, combating oxidation and delaying aging.

Sustainability

Our method

The Olive Grove in Seto, both dry and irrigated, is a very sustainable and environmentally friendly crop, which uses large and bright frames that require a smaller number of trees per hectare, which means that these plantations demand a smaller amount of natural resources and inputs. It has a positive carbon footprint balance, which makes it a great ally of our planet in the fight against climate change, since it helps eliminate CO2, a harmful gas present in our atmosphere that causes global warming.

This greater width of the frame means that the olive trees can better distribute their leaf mass in the line to capture the light and have the space and aeration necessary to develop properly. Also making it possible to practice natural pruning inspired by that of traditional olive trees, which allows them in a simple and economical way to capture solar radiation more effectively and obtain high fatty yields and excellent EVOOs every year.

Furthermore, the arrangement of the trees in a hedge improves animal biodiversity, since it attracts a large number of birds and wildlife that find in them a refuge and an ideal habitat in which to live.
